このお酒は瓶火入れをし、冷蔵庫でじっくりと１年以上熟成させたお酒。亀の尾は火入酒でもタンクに貯蔵せずに、１本１本瓶火入れして低温で時間をかけて熟成させることが最良の熟成方法であると経験的に気付いた結果である。
