酒米の精米は、米粒が割れないように時間をかけてゆっくりと行う必要があり、特に純米大吟醸においては大切です。中硬質米の美郷錦は比較的米粒が割れにくいので、その点有利です。香りほどよく、仕込み水の柔らかさと相まって、じっくりと味わえるお酒になっています。
