「愛山」。栽培が非常に難しく、「酒米のダイヤモンド」「幻の酒米」とも言われています。 簸上では初めてこの「愛山」を使用し試験醸造酒しました。 愛山らしい甘みのある味わいと、簸上らしいすっきりとしたあと味のお酒に仕上がっています。
