静岡酵母を用いた酸の少ない酒質です。よく切れた日本酒度と旨味成分によりおだやかな味わいです。静岡酒的な味わいで、生酛・山廃で造ったほかの杉錦とは異なるタイプです。２０１７ＢＹより酵母をNEW-５からＨＤ－１に変更しました。
