一般的に流通している山廃の酒は燗にして楽しむのが一般的ですが、私も含めて私の周りにはその熟成した（老ねた）香りや鼻にツンとくるアルコール感が苦手な人が多いので、敢えて「冷やして楽しむフレッシュな山廃」をテーマに仕込みました。
